Cauliflower & Sweet Potato Dhal with Golden Glow

A grounding, vibrant dhal spiced with Maple Co’s Golden Glow blend. Perfect for cosy nights or a make-ahead nourishing lunch.

Ingredients

For the Dahl

  • 1 ½ cups red lentils, rinsed well
  • 1 tbsp ghee or coconut oil
  • 1 brown onion, finely diced
  • 3 tbsp Maple Co Golden Glow spice blend
  • 1 tsp sea salt (+ more to taste)
  • 1 can (400 ml) coconut milk
  • 3 cups water or vegetable stock (add more as needed)

For the Roasted Vegetables

  • ½ large cauliflower, cut into florets
  • 1 medium sweet potato, cut into small cubes
  • 2 tbsp olive oil or melted ghee
  • ½ tbsp pure maple syrup
  • ½ tsp sea salt
  • 1 tsp Golden Glow spice blend

To Serve

  • Fresh coriander and herbs
  • Cooked basmati rice

Method

  1. Roast the Vegetables
    Preheat oven to 200 °C (fan-forced). In a bowl, toss cauliflower and sweet potato with oil or ghee, maple syrup, salt, and 1 tsp Golden Glow. Spread on a tray and roast for 25–30 minutes, until golden and tender.
  2. Sauté the Aromatics
    Heat ghee or oil in a large pot over medium heat. Add onion and sauté for 5 minutes until soft and translucent.
  3. Add Golden Glow Spice & Lentils
    Stir in Golden Glow blend and salt, Add the rinsed lentils, coconut milk, and stock or water. Stir to combine.
  4. Simmer Until Creamy
    Bring to a gentle boil, then reduce to low heat. Simmer uncovered for 25–30 minutes, stirring occasionally, until the lentils are soft and the dahl is thick and creamy. Add a splash more water if needed.
  5. Serve
    Spoon the warm dahl into bowls and top with the roasted cauliflower and sweet potato. Finish with fresh herbs and serve with steamed basmati rice.
