Golden Glow Curry with poached chicken, greens & chilli oil

Deeply nourishing, unbelievably delicious, and ready in under 20 minutes. If we’re honest, this might be our favourite blend… purely for this recipe.

Ingredients

  • 2 tbsp Maple Co Golden Glow
  • 1 can (400ml) coconut cream
  • 1 pinch sea salt
  • 1 chicken breast (or 2 if small)
  • 1 head bok choy, halved lengthways
  • 1 handful green beans, trimmed
  • Steamed rice, to serve
  • Chilli oil, to finish

Method

  1. Poach the chicken:
    Bring a pot of water to a gentle simmer, then add the chicken breast. Poach for 15 minutes until cooked through and tender. Remove and slice once slightly cooled.
  2. Make the curry sauce:
    In a separate pot, whisk together the coconut cream, Maple Co Golden Glow, and sea salt. Bring to a gentle boil, stirring until smooth and golden.
  3. Prepare the greens:
    Place bok choy halves and green beans in a heatproof bowl. Pour over boiling water and let sit for 2–3 minutes until just tender, then drain.
  4. Assemble:
    Add rice to a serving bowl, then layer with the greens and sliced chicken. Pour the warm curry sauce over the top and drizzle with chilli oil.
