Maple charred pumpkin wedges

SERVES: 2-4 as a side

COOKING TIME: 25-35 MINUTES

Sweet, savoury, and deeply comforting.
Thick-cut pumpkin wedges are roasted until golden and caramelised. Perfect as a side, salad base, or bowl hero.

Ingredients

4 thick-cut pumpkin wedges

½ tablespoon Moroccan Magic

1 tablespoon maple syrup

Drizzle of olive oil

Pinch of salt

Method

Preheat the oven to 200°C 

Place the pumpkin wedges on a tray lined with baking paper.

Drizzle with olive oil, then sprinkle over the Moroccan Magic, salt, and maple syrup.

Use your hands to rub everything evenly over the pumpkin. Place them standing up right.

Roast for 25–35 minutes depending on thickness until tender inside and charred and caramelised on the edges.

Serve warm as a side, in salads or bowls, or topped with herbs, yoghurt, or feta if desired.
