Moroccan Beetroot Hummus
MAKES: 1.5 CUPS
TOTAL TIME: 10 MINUTES
A vibrant, earthy dip spiced with Moroccan warmth. This nourishing hummus is as stunning as it is flavourful, perfect for platters, wraps, or dolloped onto salads.
Ingredients
- 1 small raw beetroot, peeled and chopped
- 1 cup of cooked chickpeas
- 3 cloves garlic
- 2 tbsp olive oil
- 2 tbsp hulled tahini
- Juice of 2 lemons
- 1 tbsp Maple Co’s Moroccan Magic spice blend
- Ice cubes and cold water (as needed for texture)
- Sea salt, to taste
Method
Add all ingredients to a blender or food processor.
Blend until smooth and creamy, adding a little cold water if needed to reach your desired texture.
