Moroccan Magic Tray Bake With Salmon

COOKING TIME: 12–15 minutes

This Moroccan Tray Bake is an easy, nourishing dinner that's packed with colourful vegetables and full of flavour. Simply use your favourite vegetables or whatever you have on hand, and swap the salmon for chicken thighs, white fish or chickpeas to make it your own.

Ingredients

2 salmon fillets

4 cups mixed vegetables of your choice, chopped (we recommend pumpkin, zucchini, eggplant, red capsicum, red onion and cherry tomatoes)

2 tbsp Maple Co Moroccan Magic

¼ cup olive oil

Juice of ½ lemon

1 tsp maple syrup

½ lemon, sliced into rounds

⅓ cup olives

50g feta, crumbled

Fresh parsley, chopped

Method

Preheat the oven to 200°C.

Add the chopped vegetables to a large baking tray.

In a small bowl, whisk together the olive oil, lemon juice, maple syrup and 2 tbsp Maple Co Moroccan Magic. Pour over the vegetables and toss until evenly coated.

Bake for 25–30 minutes, or until the vegetables are almost tender.

Place the salmon fillets on top of the vegetables and top each fillet with a few lemon slices. Return to the oven for 12–15 minutes, or until the salmon is cooked through and flakes easily with a fork.

Scatter over the olives, feta and fresh parsley before serving.
