Oyster mushroom peanut satay noodles

COOKING TIME: 12–15 minutes

An easy, cosy noodle bowl.
Rice noodles tossed in Golden Glow peanut satay sauce with oyster mushrooms. Simple, satisfying, and full of flavour.

Ingredients

  • 2 serves rice noodles of choice, cooked
  • ½ cup Golden Glow Peanut Satay Sauce (see separate recipe)
  • 2 cups vegetables of choice, sliced
    (beans, carrot, zucchini work beautifully)
  • 4 king oyster mushrooms, sliced
  • Shallots, to serve
  • Peanuts, to serve
  • Lime wedges, to finish

Method

Cook the rice noodles according to packet instructions, drain and set aside.

Heat a pan over medium heat with a little oil. Add the sliced oyster mushrooms and cook until golden (about 5–6 minutes).

Add the vegetables and cook until just tender but still vibrant (3–4 minutes).

Remove from heat and add the cooked noodles and Golden Glow peanut satay sauce, tossing gently to coat everything.

Serve topped with shallots, peanuts, and a squeeze of lime.
