Roasted Lemon Chicken & Poatoes

A simple one-pan roast that's full of comforting flavours. Golden potatoes, juicy roast chicken and fresh lemon come together with Maple Co Ciao Bella for an easy family dinner.

  • 1 whole chicken (approx. 1.5–1.8 kg)
  • 8 medium potatoes, cut into wedges or chunks
  • 1 tbsp Maple Co Ciao Bella
  • 2 lemons
  • 3 tbsp olive oil
  • 2 tsp plain flour (for the gravy)
  • Serving a greens as a side

Method

  1. Preheat the oven to 200°C (180°C fan-forced).
  2. Pat the chicken dry and butterfly (optional). Place the chicken in a large roasting dish with the potatoes.
  3. Drizzle over the olive oil and the juice of 1 lemon. Sprinkle over the Maple Co Ciao Bella and toss the potatoes until evenly coated. Rub any remaining seasoning over the chicken. Place the squeezed lemon halves inside the cavity of the chicken.
  4. Slice the remaining lemon and scatter the slices throughout the roasting dish.
  5. Roast for 1 hour 20–30 minutes, or until the chicken is golden and cooked through.
  6. Transfer the chicken to a serving platter and allow it to rest for 10 minutes.
  7. Meanwhile, pour the pan juices into a small saucepan. Whisk in 2 tsp plain flour over medium heat until smooth, adding a splash of water or chicken stock if needed to reach your desired consistency. Simmer for 2–3 minutes until thickened into a gravy.
  8. Carve the chicken and serve with the roast potatoes, homemade gravy and your favourite steamed greens.
